Cuban inspired mojo chicken wraps with pineapple roasted red pepper salsa
This recipe is a healthy and fresh summer friendly recipe. Inspired by Cuban Mojo pork and spiced up with a zesty pineapple salsa. This recipe was written by Ed Charbeneau a computer programmer, amateur home cook and author of www.WeekendChowDown.com.
INGREDIENTS:
mojo marinade:
1 1/2 lbs chicken breast
3 oranges, juiced, 1 zested
3 limes, juiced, 1 zested
6 cloves of garlic, minced
1/2 cup olive oil
1 tbsp cumin
1 tbsp fresh black pepper
1 tbsp kosher salt
pineapple red pepper salsa:
1 cup pineapple, diced
1/4 cup red onion, diced
1 tsp crushed red pepper
1 roasted red bell pepper, diced
1 tbsp mojo marinade
1/4 cup of fresh chopped basil, chiffonade
wrap:
whole wheat tortilla
grilled mojo chicken
red cabbage, shredded
salsa
sour cream
