Blue Ribbon Winner: King of Tarts

Shell Law took first place at the Kentucky State Fair for the "Make-it-with-Malt-o-Meal" Contest. Now she is in the studio sharing the recipe for her blue ribbon-winning King of Tarts.

King of Tarts (Dedicated to Elvis)

Tart Shells:

2 cups peanut butter

2 cups sugar

2 eggs

3 cups Malt-O-Meal Crispy Rice Cereal

Filling:

1 package (4 serving) instant banana pudding mix

1 cup milk

1 (8 ounce) container sour cream

1 (8 ounce) container cool whip non dairy topping

2 bananas, diced

Garnish:

Whipped cream

Chopped peanuts

Banana chips

Tart shell crumbles

Preheat oven to 350 degrees. Mix first three tart shell ingredients together well. Add Malt-O-Meal Crispy Rice cereal and mix in gently. Spray muffin tins with non-stick butter spray. (For ease in removing tart shells from tins, before spraying, press a 1x6-inch piece of foil into each cup with edges extending outside of cup.) Take out about 2 tablespoons dough and press onto a small foil lined pan to about 1/4-inch thick. Press remaining dough into muffin tins (approximately 3 tablespoons in each cup). Bake for 15 minutes. Let tart shells cool for 10 minutes before removing from pan. Makes 20 tart shells.

For filling, mix together pudding mix and milk. Whisk in sour cream. Fold in cool whip. Refrigerate until ready to serve. Fold in diced bananas and fill tart shells. Garnish with whipped cream, chopped pecans, banana chips and tart shell crumbles as desired. Crumble the other baked dough to sprinkle on top of the pudding.
