Dine & Dash: Keep your trick-or-treaters healthy with a vegetarian chili

Treat your favorite monsters this Halloween to a healthy dinner with Home Cuisine's Vegetarian Chili with Ghoulish Tortilla Crisps! Mae Pike will show you how to create this flavorful and nutritious dinner.

Vegetarian Chili

Serves: 6 to 8

4 tbsp. olive oil
2   yellow onions, large, chopped
2   green peppers, chopped
3 c  vegetable broth
3 - 15 oz. cans diced tomatoes, including juice
2 - 15 oz. cans crushed tomatoes
4 - 15 oz. cans dark kidney beans
3 tbsp. granulated garlic
6 tbsp. chili powder  (or more, according to taste)
1 tsp.  ground chipotle powder
1 tsp.  ground cumin
1 lb.  cooked whole wheat spaghetti

Brown the onions and peppers in olive oil over medium heat in a large skillet. Add the vegetable broth, beans, crushed and diced tomatoes and all of the seasonings. Bring the mixture to a boil; reduce heat to a simmer and cook for approx. 10 minutes.

Prepare the whole wheat spaghetti according to the box directions. Drain and equally divide the spaghetti onto serving plates. Then equally portion the chili over the spaghetti. Serve with the Ghoulish Tortilla Crisps. Enjoy!

Ghoulish Tortilla Crisps
Serves: 6 to 8

10 whole wheat tortillas
canola oil or olive oil spray - to taste
sea salt - to taste
granulated garlic - to taste
cookie cutters in the shape of pumpkins or ghosts

Preheat oven to 350¢ªF. Cut out tortillas into the desired shape(s) using cookie cutters.  Spray the tortillas lightly with oil and sprinkle with a bit of salt and garlic. Bake at 350 ¢ªF for approximately 5 minutes.
