A more healthy version of "Os" pasta for children from Home Cuisine

Children love canned pasta. But those cans of "Os" are not the healthiest option. One cup of "O's with meatballs" is almost 250 calories and has 8 grams of fat and 660 milligrams of sodium. The Home Cuisine's Mae Pike has a more healthy pasta dish parents can make ahead and children will love.

A Healthier "O" pasta

2 Tablespoon extra-virgin olive oil

3 garlic cloves, peeled, minced

1 small yellow onion, minced

1 tablespoon tomato paste

2 Cups Fresh Roma Tomatoes, Diced

1 Teaspoon Agave Syrup

2 basil sprigs

Salt and freshly ground pepper

In a large saucepan, heat the oil.

Add the garlic and onion,cook over moderate heat, stirring occasionally, until golden, about 5 minutes.

Add the tomato paste tomatoes with their juices.

Stir in the Agave and basil, season with salt and pepper and bring to a boil.

Simmer the sauce over low heat, stirring occasionally, until it thickens and is reduced to 3 cups, about 30 minutes.

Season again with salt and pepper.

Discard the basil sprigs and garlic.

Keeps for three days. Serve over whole wheat pasta
