Gerold Hobbs is a chef, pitmaster and manager for Famous Dave's in Clarksville by day.
But he can cook a mean meatloaf--thanks to his mom's recipe.
He showed us the secret to having a moist, tender meatloaf that will please everyone.
Gerald's Mom's Meatloaf
Items needed:
1 large mixing bowl
1 medium mixing bowl
1 pan for baking (at least two inches deep)
Ingredients:
3 lbs. ground beef
2 eggs
1 1/2 cups chopped onions
1 1/2 cups chopped green pepper
1/2 cup celery
1 1/2 tablespoon of season salt
1 teaspoon granulated garlic
1/2 teaspoon pepper
1 tablespoons of Kitchen Bouquet
6 pieces of bread (broken into pieces)
1/4 cup of milk
1 1/2 cup of ketchup
Preheat oven to 350 degrees.
In a large bowl, place meat, onions, celery and green peppers.
In a medium bowl, place eggs, spices, Kitchen Bouquet, bread, milk and ketchup.
Let this set for five minutes.
After five minutes, combine mixtures from both bowls and mix well.
Place mixture in pan in the form of a loaf. Top with ketchup and green pepper rings (optional).
Bake uncovered for one hour and 20 minutes or until meat reaches an internal temperature of 160 degrees.
Remove from oven and let stand for 10-15 minutes.
Using two spatulas, remove from pain and place on serving tray.
Slice and enjoy!
