Home Cuisine's Mae Pike has a great idea for any leftovers you may have from your fourth of July cookout.
It's a pasta salad with a not so guilty dressing. Prep time is about ten minutes and cook time is around 20 minutes.
It is a left-over dish, so whatever you have on hand, just go ahead and mix it in.
Pasta Salad (made with leftovers!)
8 Servings Cooked and drained Whole Wheat Pasta
1 Pound Cooked Shrimp
1/2 cup Diced Onion
1 cup sliced celery
1 cup diced cucumber
1/2 cup diced red pepper
Dressing:
1 cup fat free mayonnaise
1/2 cup low fat plain yogurt
2 Tablespoons lemon juice
2 Tablespoons Dill
1 Tablespoon Capers
Salt and Pepper to taste
Preparation Time: Approximately 10 minutes Cook Time: Approximately 20 minutes
For the Dressing: Combine the yogurt, mayonnaise, lemon juice, salt, pepper, dill and capers in a small mixing bowl; mix well. For the Pasta Salad: Cook the pasta according to the package directions; drain and rinse under cold water. Combine the remaining ingredients. Add the dressing; toss to coat. Cover and refrigerate until time to serve.
