
Potato salad is one of the most versatile side-dishes that can have a wide range of flavors.
Kroger Chef Paul Dowell is here with his version of potato salad that includes just enough vegetables to balance all that bacon.
Makes 6-8 servings.
½ cup Kroger Ranch Dressing
1 can Kroger Dice Tomatoes with Green Chili
2 Tbl. Kroger Dijon Mustard
3 lbs. Small Red Potatoes (boiled until just tender & quartered)
1-15.25 canKroger Whole Kernel Corn
½ cup Celery (sliced)½ cupRed Bell Pepper (diced)
½ cupRed Onion (diced)
8 slices Hickory Smoked Bacon (cooked crisp & rough chop)
1 cups Sharp Cheddar Cheese (shredded)
-Mix dressing, tomatoes, & mustard in a large bowl until well blended.
-Add all remaining ingredients except bacon & sharp cheddar cheese. Mix well & turn into a serving bowl.
-Top with bacon & sharp cheddar cheese & serve.
-Goes well with any of your favorite grilled meats for an everyday dinner or double the recipe for a great get together!
