Home Cuisine lightens up a breakfast favorite.

Mae Pike shows the quick changes that can make an egg muffin a lot healthier.

But her version cuts the price and the fat but doesn't skimp on flavor.

Healthy Egg Muffin


12 large eggs (may substitute Egg Beaters or use all egg whites, if desired, for even lower calorie/fat gram count)

12 100% whole grain English muffins

12 slices Turkey Bacon, prepared

One Cup Shredded Cheddar Cheese

black pepper, freshly ground


Poach or Microwave the eggs

Toast the English Muffins w 1 Tablespoon on Cheese on half Fill Muffins w Egg and Turkey Bacon and a dusting of Pepper

To Microwave Egg:

Break and slip one (1) egg into each of two lightly-greased 10-ounce custard cups or a pie plate.

Gently prick yolks with tip of knife or wooden pick.

Cover with plastic wrap.

Cook on 50% power just until eggs are almost desired doneness, about 2 to 3 minutes.

Let stand, covered until whites are completely set and yolks begin to thicken but are not hard.
