Getting your kids to eat their veggies in a tasty sandwich

Getting your children to eat their vegetables might be as easy as stuffing them into a tasty, toasted sandwich. Janine Fabe, Meijer Dietitian/Healthy Living Advisor, shows was in studio to make a Ham Caprese Panini.@

The Healthy Schools, Healthy Minds is a Produce for Kids campaign running in all Meijer stores this fall.

The Healthy Schools, Healthy Minds Meijer campaign will take place September 2 - 29.

This year, the campaign is benefiting www.DonorsChoose.org, an online charity aimed at helping public school teachers obtain the supplies needed for their classrooms.

Teachers can submit requests for their classroom projects on DonorsChoose.org and then individuals and organizations can donate directly to the projects that inspire them. DonorsChoose.org then buys and sends the supplies directly to the classroom.

All funds raised for the Meijer Healthy Schools, Healthy Minds campaign will benefit local Meijer market schools by funding nutrition based projects local teachers have submitted through www.DonorsChoose.org.

Serves: 4

1 whole grain baguette (or 4 large rustic whole wheat rolls)

1 Tbsp. unsalted butter (or cooking spray)

½ lb. sliced Markets of Meijer low sodium ham

2 Sunset® Campari® brand cocktail tomatoes, sliced

4 slices Provolone cheese

½ cup Earthbound Farm® organic baby spinach, loosely packed

8 large fresh basil leaves, thinly sliced

Directions:

1. Preheat Panini maker or grill to medium-high heat.

2. Cut ¾ way through rolls, creating a hinge. Lightly butter outside of rolls.

3. Assemble sandwich by adding ham, cheese, tomato, spinach and basil.

4. Cook in Panini maker per instructions, until bread is golden brown and cheese is melted. If using grill, place sandwich on grill and lay heavy pan on top to press sandwich down. Cook 3-6 minutes, or until bread is golden brown.

5. Flip over and repeat process until bread is golden brown and cheese is melted on both sides.
