Fruit Risotto, a traditional Italian dish

Teresa Crocco with Catering by Teresa has the recipe for an Italian tradition. Fruit risotto is made in some parts of Italy as alta cucina. Here is one with strawberries; blueberries and peaches are also used.

Risotto with Strawberries

Ingredients for 4 people:

15 strawberries

White wine

¼ cup finely chopped leeks

1 Shallot

4 tablespoon unsalted butter

1 tablespoon olive oil 

2 cups Arborio rice

4 cups hot chicken broth

½ cup grated Parmigiano Reggiano cheese 


1. Cut strawberries and cover with white wine to marinate for an hour.

2. Chop the leeks and shallots and sauté in butter and oil. 

3. Add the rice and stir until well coated with the ingredients. 

4. Strain the strawberries and reserve the wine.

5. Add 2/3 cup of the wine to the rice a little at a time and stir continually over medium heat until it is absorbed.

6. Once you have used up all the wine start to add the broth, stirring as it is absorbed.

7. Continue adding ladles full of broth and stirring continuously for 20 minutes (or until rice is half cooked).

8. Salt and pepper to taste. 

9. Add strawberries and continue to stir and add broth if needed, until rice is cooked, but remains slightly firm to the teeth.

10. Remove from the heat, stir in the parmigiano reggiano cheese.  

11. Serve hot and garnish with strawberries.
