Mae Pike's recipe for cherry stuffed baked apples

Fall is here as the weather begins to cool. That means fall foods are back. Home Cuisine's Mae Pike is sharing her recipe for baked apple.


3/4 cup dried sweet cherries

1/4 cup packed brown sugar Splenda

1/4 cup coarsely chopped walnuts

2 1/2 teaspoons pumpkin-pie spice

8 Granny Smith apples (about 3 pounds)

1 cup apple juice

1/4 cup Agave syrup


1. Preheat oven to 350°.

2. Combine the first 4 ingredients in a small bowl to make a cherry mixture.

3. Core the apples. Peel the top half of each apple. Then fill apples with the cherry mixture.

4. Place the apples in a 12-inch cast-iron or heavy ovenproof skillet. Add the apple juice to the skillet.

5. Combine the maple syrup and butter and pour it over the apples.

6. Cover the skillet and bake at 350° for 40 minutes.

7. Uncover the skillet and baste the apples with juices from pan.

8. Bake, uncovered, an additional 25 minutes or until tender. Serve with the sauce.

Note: Apples can also be baked in a 13 x 9-inch baking dish.
