Have a healthy Halloween with frozen banana ghosts

Meijer Dietitian and Healthy Living Advisor Janine Faber, MEd, RD, LD stopped by the studio to share some healthy Halloween recipes.

Couscous Stuffed Peppers

Serves: 4


2 tbsp. chopped shallots

4 cups cooked whole wheat couscous

1/2 cup Kraft Part-Skim Mozzarella cheese

1 cup diced fresh tomatoes

2 tsp. dried Italian seasoning

1/2 tsp. freshly ground pepper

4 large orange bell peppers

1 1/2 cup Meijer black beans, rinsed and drained


1. Preheat oven to 350°F. Lightly grease a 9x9-inch baking dish. In large bowl combine cooked couscous, tomatoes, beans, Italian seasoning and black pepper; set aside.

2. Cut off tops of bell peppers; remove seeds and membranes. Cut out jack-o-lantern face on bell peppers. Cook in boiling water 5 minutes; drain upside down on paper towels.

3. Coat large nonstick skillet with nonstick cooking spray. Add shallots; cook over medium heat for about 3-5 minutes. Add to couscous mixture in bowl; toss to blend.

4. Stuff bell peppers evenly with couscous mixture; top with cheese. Place in baking dish.

5. Bake 10 to 15 minutes or until bell peppers are tender and cheese is melted.


Frozen Banana Ghosts


2 bananas

Greek yogurt

Crushed nuts or shredded coconut

8 dark chocolate chips

4 raisins

4 popsicle sticks


1. Peel the bananas and cut them in half. Place the banana halves on popsicle sticks.

2. Mix the yogurt and cinnamon together. Coat the bananas in yogurt and almonds. Make ghosts' eyes with the dark chocolate chips and the ghosts' mouth with the raisin.

3. Lay the bananas on parchment paper or aluminum foil and freeze for at least 1 hour.

Monster Dessert: Draw a face onto a clear cup. Add green food coloring to vanilla pudding and crush oreos on top. Source: A Turtle's Life For Me.
