Executive Producer Cara Sabin's No Bake Cookies
"Here it is. There's no trick. It's just chocolate, peanut butter, oatmeal and a lot of stirring!"
1 stick of margarine
2 cups of sugar
1/2 cup of cocoa
1/2 cup of milk
1 cup of peanut butter (crunchy if you have it!)
1 tablespoon of vanilla
3 cups of one-minute oats
Melt margarine in a large pot. Add sugar and cocoa and stir until thick and
Next add the milk and bring the chocolate mixture to a simmer.
Let the mixture cook until it reaches a soft-ball stage (see below).
Once mixture is at the soft-ball stage turn off the heat.
Add peanut butter and stir until melted.
Then add vanilla and stir.
Finally, add the quick oats one cup at a time.
**If you want a less textured cookie, add fewer oats (it won't hurt the recipe
Drop by rounded teaspoons full on to waxed paper.
(It's best to put newspaper under the waxed paper, so you don't leave wax rings on the counter top.)
Let them cool, then store in an airtight container.
--How to determine if your cookies have reached the soft-ball stage:
It's very important the sugar melts to a texture that will allow the cookies to "set up."
So, get a cup of room temperature water.
When the chocolate mixture starts to coat the spoon you're using to stir, drizzle some of the mixture into the cup of water.
If it hits the water and firms up to where you can roll it around in a ball shape, it's ready.
