Exec. Producer Cara Sabin's Grandma Clara Graham's Pineapple Upside Down Cake
"This recipe just tastes like a memory to me. It's a long-standing tradition in my family."
3 eggs (separated)
1 cup flour
1 cup sugar
6 tablespoons of *hot* water (from tap)
1 teaspoon of baking soda
1 teaspoon of vanilla
1 cup brown sugar
3 tablespoons of butter or margarine
1 can of pineapple rings
1 small jar of maraschino cherries
Melt butter in the iron skillet or cake pan.
Add sugar and bring to a simmer.
Arrange fruit directly on to the bottom of the pan.
Beat egg yellows with sugar. Add flour and hot water--then add vanilla and
Beat egg whites to stiff peaks in a separate bowl.
Fold egg whites into the batter.
Pour batter on to hot fruit mixture and bake at 350 degrees for 40 minutes or
until an inserted toothpick comes out clean.
Recipe is meant to be baked in an iron skillet.
