Lindsay Allen's Mom's Swedish Rice Pudding

(The dish gets its namesake because of my mother's Swedish heritage, no other reason)


1 cup cooked rice

2 1/2 cups milk

1/2 cup sugar

1/2 cup raisins

2 egg yolks

1 tsp. cinnamon

1 tsp. nutmeg

2 tsp. vanilla extract

Juice from half a lemon

pinch of salt

Preheat oven to 400 degrees.

Combine milk, egg yolks, sugar and salt in bowl. Add in rice, raisins, spices, lemon juice and vanilla. Stir. Mixture should be somewhat runny at this point. Pour into baking dish.

Put baking dish into a larger baking dish and add 1/2 inch of boiling water (creating a water bath). Bake for 60 to 70 minutes. Pudding is done when it looks set. Remove from oven but let stand in water bath for another 5 minutes. Sprinkle a little extra sugar on top or whipped cream. Enjoy warm.

Optional: Add tsp. of orange zest

Add chopped walnuts for crunch

Add a splash of bourbon for Kentucky flair
