Sterling Riggs' Angel Pudding
"This is a great and versatile recipe that can be made very diet and diabetic friendly."
1 Angel food cake (store bought is great)
1 large box of instant vanilla pudding (sugar free optional)
1 tub of Cool Whip (you can use fat-free or any variety of whipped topping)
1 jar of maraschino cherries (or fresh berries, if you prefer)
In a large bowl, prepare pudding according to box directions. Fold in Cool Whip. Rip up angel food cake into bite size pieces. Then drain cherries and empty jar into pudding.
Chill and serve.
You can also "free form" a little by changing the cake, pudding and/or fruit. For instance, you could do chocolate pudding, chocolate cake and fresh raspberries, etc.
