Sister Connie's Best Breakfast Burritos
1 lb. sausage or real Bacon Bits
1 onion (chopped)
3 to 5 jalapeno peppers (diced)
2 to 3 cups of Cheddar cheese
12 to 15 flour burritos
salt and pepper to taste
1. In a very large skillet fry sausage until done add onion , jalapeno peppers , 12 eggs , salt and pepper. Stir to scramble eggs until well done.
2.Heat a griddle. Instead of spraying the griddle with butter Pam , I spray each side of burritos.
3.Place egg mixture in a large bowl. Have cheddar cheese and burritos setting where they can be used together.
4. Spoon out egg mixture in center of burrito and then add desired amount of cheese. Fold in sides then top and bottom on burrito, spray side that is folded and put on griddle folded side down. Cook until browned on both sides.
When you are ready to eat them , spoon desired amount of salsa on them or eat them just as they are.
Note: these burritos can be refrigerated for 4 to 5 days. They can also be frozen. Just put them in a skillet over low heat with a lid over them (turning constantly). Or heat in a microwave oven.
