
Jeremy Kappell's mother has been serving quiche every Christmas morning since he can remember. Here's her famous recipe:
Jeremy Kappell's Mom's Christmas Quiche'
2 deep dish pie shell
8 eggs
2 cup milk
1 pound breakfast sausage
1 small chopped sweet onion
½ green pepper, chopped
2 cups shredded cheddar cheese
1 can of sliced mushrooms (optional)
Salt and pepper
Cook sausage, onion, and green pepper together. Drain and set aside.
Beat together the eggs, milk and salt and pepper, set aside.
Bake the pie shells at 375 degrees for about 5 minutes
Fill pie shells about ½ full with sausage mixture, add mushrooms if wanted
Pour the egg mixture over the sausage mixture until the shell is ¾ full
Cover the pie with the shredded cheese
Bake at 375 degrees about 35 minutes or until the egg mixture feels firm and is golden brown.
