
Nothing sets a holiday table like serving game hens or cornish hens to your guests. These small birds are perfect single-servings and make a great presentation. But these hens don't have to be cooked with a standard chicken recipe. Home Cuisine's Mae Pike shows a simple preparation with root vegetables.
Game Hens over Root Veggies
2 tablespoons Fresh Rosemary
2 teaspoons grated Myer Lemon peel
Thin slices of Myer Lemons
2 Cornish game hens
1 1/2 tablespoons Olive Oil
2 cloves minced Garlic
S+P
1 Peeled and cubed Sweet Potato
1 Large onion. Quartered
2 Carrots, peeled and cubed
4 Stalks of Celery, cut in chunks
Preparation
Preheat oven to 450°F.
Slide fingertips under skin of hen halves to loosen.
Spread Rosemary and Lemon Zest, Garlic, and slices of Lemon skin of each hen.
Rub skin with olive oil; sprinkle with salt and pepper.
Toss prepared Veggies in Olive Oil, Salt and Pepper
Place Hens over Root Veggie mixture in Roasting Pan
Roast hen halves until golden and cooked through, about 30 minutes
