Home Cuisine's Mae Pike says Christmas brunch is one option for holiday gatherings, and there are plenty of ways to make a healthy meal for your guests.
She's showing us how to make roasted new potatoes filled with a low-fat dilled cream cheese blend, topped with smoked salmon and capers. It sounds fancy, but it's a simple and flavorful dish.
It's also part of the Christmas brunch menu prepared by Home Cuisine for pickup or delivery. It features a roasted vegetable quiche, orange-cranberry breakfast bread, and roasted new potatoes filled with a low-fat dilled cream cheese blend, topped with smoked salmon and capers. Also included are a citrus salad over mixed greens, a "Partridge in a Pear Tree" pear crisp, and the customer's choice of uncured bacon strips or turkey sausage.
Customers can pick up their orders at any Louisville-area Rainbow Blossom location on December 24.

Stuffed New Potatoes w Dilled filling and Caviar
Ingredients
12 tiny red potatoes (about 1-1/2-inch diameter)
1/4 cup Low Fat Bream Cheese
1/4 cup low fat Sour Cream
2 tablespoons finely chopped green onion
1 teaspoon snipped fresh dill
1 tablespoon Roasted Red Peppers, Diced
1/4 teaspoon lemon juice
1/8 teaspoon salt
1/8 teaspoon pepper
Dash hot pepper sauce, optional
Caviar for Topping (Optional)
Fresh dill sprigs
Directions
Boil Potatoes until soft
Hollow Potatoes with a Mellon Baller, leaving a thick shell, and slice the bottom from each potato to keep them from rolling. Keep potato for filling. Lightly coat with olive oil and roast, and 375, until soft and crispy
In a large bowl, mash the pulp. Beat in the cream Cheese, sour cream, onion, dill, lemon juice, Roasted Red Peppers, salt, pepper and hot pepper sauce if desired. Pipe into potato shells. Garnish with dill sprigs and Caviar. Yield: 2 dozen.
