Stuffed New Potatoes with Home Cuisine

Posted: Updated:

Holiday traditions center on food. But not everyone wants to bust their diet with too many sweets and big high-calorie dinners.

Home Cuisine's Mae Pike says Christmas brunch is one option for holiday gatherings, and there are plenty of ways to make a healthy meal for your guests.

She's showing us how to make roasted new potatoes filled with a low-fat dilled cream cheese blend, topped with smoked salmon and capers. It sounds fancy, but it's a simple and flavorful dish.

It's also part of the Christmas brunch menu prepared by Home Cuisine for pickup or delivery. It features a roasted vegetable quiche, orange-cranberry breakfast bread, and roasted new potatoes filled with a low-fat dilled cream cheese blend, topped with smoked salmon and capers. Also included are a citrus salad over mixed greens, a "Partridge in a Pear Tree" pear crisp, and the customer's choice of uncured bacon strips or turkey sausage.

Customers can pick up their orders at any Louisville-area Rainbow Blossom location on December 24.

Orders will be accepted through Friday, December 21 at (502) 896-0666.
