
Kroger Chef Paul Dowell shows us how to make a quick one-dish dinner with just enough spice to please both kids and adults.
Mexican Tortilla Bake
Makes 8 to 10 servings.
2 cups Garden Fresh Gourmet Tortilla Chips (crumbled) found in Kroger Deli
1Deli Savory Roasted Chicken (meat pulled and shredded) from Kroger Deli
1 can Kroger Brand Pinto Beans (drained and rinsed)
1 can Kroger Brand Black Beans (drained and rinsed)
1 (8 oz.) can Kroger Brand Tomato Sauce
1 cup
Garden Fresh Gourmet Salsa, Jack's Special HOT, from Kroger Deli
½ Red onion (small diced)
½ Green pepper (small diced)
1 cup Kroger Brand Shredded Pepper Jack Cheese
1 cup Kroger Brand Shredded Sharp Cheddar Cheese
Preheat oven to 350 degrees.
Spray a 9x13 baking dish with non-stick spray. Scatter the crumbled chips evenly on the bottom.
Combine chicken, pinto beans, black beans, tomato sauce, salsa, red onion, and green pepper. Mix well.
Combine cheeses. Mix well.
Place ½ of the chicken mixture over chips followed by ½ the cheese mixture. Repeat with the other ½ of each.
Bake for 30 minutes. Let stand a few minutes before serving to cool slightly. Great served as an entrée for dinner or a perfect dish for a get together!
