Home Cuisine takes the guilt out of serving benedictine for Derby

It's not uncommon to put on a few pounds during Kentucky Derby season. The parties are not known for low-cal options. But Home Cuisine's Mae Pike has a low fat benedictine you can serve guests guilt-free.

Low Fat Benedictine

Ingredients:

1 large cucumber

8 ounces Low Fat Cream Cheese, softened

2 tablespoons grated onion

1/4 tsp salt

1 tablespoon mayonnaise

1 Teaspoon Dried Dill

Preparation:

Pare, grate, and drain cucumber. Combine with remaining ingredients in Mixer.

Serve as is or as a sandwich or canape spread. Thin with low fat sour cream to make a dip for vegetables.
