The Triple Crown wraps up with the Belmont Stakes on June 8th. But the party continues right through the races. Brittany Gilbert from Woodford Reserve is helping with race day entertaining. She's making a kicked up version of bruschetta along with a Belmont Breeze, the official drink of the Belmont Stakes.
Woodford Reserve will also sponsor the race immediately preceding the running of the Belmont Stakes. Named the Woodford Reserve Manhattan Handicap, the 1 1/4th mile turf race carries a purse of $500,000 and is for three-year-olds and up.

Official Cocktail of the Belmont Stakes
1 ½ oz. Woodford Reserve
2 oz. Lemonade
1 oz. Pomegranate juice
Combine ingredients in a cocktail shaker with ice. Strain over ice into a rocks glass. Garnish with a lemon wedge or cherry.
You can also make an alcohol-free version with just pomegranate and lemonade.
Sun-Dried Tomato and Ricotta Bruschetta
1/2 (12-ounce) baguette, cut horizontally in half
2 tablespoon(s) refrigerated pesto
1/2 cup(s) part-skim ricotta cheese
1/4 teaspoon(s) salt
1/4 cup(s) drained chopped oil-packed sun-dried tomatoes
1. Prepare outdoor grill for direct grilling on medium.
2. Meanwhile, brush cut sides of baguette with pesto. In small bowl, combine ricotta and 1/4 teaspoon salt.
3. Place baguette on grill, cut sides down, and cook about 2 minutes or until toasted. Transfer to cutting board.
4. Spread ricotta mixture on grilled sides of baguette; top with sun-dried tomatoes. Cut each crosswise into 6 pieces.
