Summer heat calls for lighter meals and foods to fuel you up without weighing you down. Kroger Chef Paul Dowell has a fresh pasta salad that's great for picnics, potlucks and lunches.
Summer Fresh Pasta Salad
Makes 8-8 oz. servings.
1 Pound Kroger Deli Private Selection Rotisserie Chicken (sliced into strips)
1 pint Grape Tomatoes (halved)
¾ cup Crumbled Feta Cheese
2 cup Baby Spinach (packed)
½ of 16 oz. pkg. Farfalle (cooked, rinsed and drained)
½ cup Sliced Black Olives (drained well)
¼ cup Red Wine Vinegar
2 Tbl. Lemon Juice
¼ cup Extra Virgin Olive Oil
½ Tbl. Dijon Mustard
½ Tbl. Dried Oregano
2 cloves Garlic (minced) or 1 ½ tsp. Jarred/Minced Garlic
TT Kosher Salt and Coarse Ground Black Pepper
Combine chicken, tomatoes, feta, spinach, farfalle and olives in a large bowl.
Combine red wine vinegar, lemon juice, olive oil, mustard, oregano and garlic in a sealed container. Shake well to combine.
Pour dressing over salad & toss together to coat well. Season to taste with salt and pepper. Refrigerate until ready to serve.
