Kroger's Paul Dowell is the studio this morning. He's got an easy to make White Chili recipe using rotisserie chicken.
1 Rotisserie chicken (meat removed from bones, cut in to cubes)
1 T olive oil
1/2 Large white onion, small dice
4 ribs celery, small dice
2 T minced garlic
1 quart low sodium Kroger low-sodium chicken broth
1- 4 oz can Kroger green chilies
1-15 oz can Kroger northern beans
1 T ground cumin
1 1/2 t dried oregano
1/2 t cayenne pepper
To taste: Kosher salt and fresh ground black pepper
In a medium stockpot, saute onion, celery and garlic in olive oil until soft and translucent.
Add chicken, green chilies, northern beans, chicken broth, cumin, oregano and cayenne pepper.
Bring to a boil and simmer 20 - 25 minutes.
Serve with chopped cilantro, sour cream and queso fresco for a quick and delicious dinner.
