A SPAM gyro takes second place in this years' Great American SPAM Championship

One of the top finalists in this years' Great American SPAM Championship at the Kentucky State Fair recreates his easy SPAM Gyro. Byron White of Louisville finished in 2nd Place at the  2013 Kentucky State Fair

Nearly 60 adults and kid competed in the competition. Entries were judged on taste (35%), creativity (35%) and presentation (30%).

Byron White's Easy SPAM Gyro

1 (8.75 ounce) container Greek Yogurt Veggie Dip

1 cup plain yogurt

4 baby greenhouse cucumbers (2 peeled/shredded & 2 sliced), divided

1 (12 ounce) can SPAM Classic, sliced thinly

1 (12 ounce) can SPAM Turkey, sliced thinly

8 pita bread rounds

1 head of shredded lettuce

1 large garden fresh tomato, sliced thinly

1/4 cup feta cheese, crumbled

Mix Greek yogurt veggie dip and plain yogurt. Using a vegetable peeler, shred 2 baby cucumbers into yogurt mix. Stir and refrigerate.

Fry SPAM in large non-stick skillet, the SPAM Classic first, followed by the SPAM Turkey (this eliminates the need for cooking spray). Place on paper towel to cool. Slice lengthwise.

Place SPAM (both Turkey and Classic) on pita round. Top with lettuce, tomato, cucumber slices. Mix feta into yogurt mix and spoon onto the Gyro. Fold and enjoy.

Yields: 8 Gyros
