Volare's Josh Moore shares his easy recipe for Tiramisu

Making a sophisticated dessert doesn't have to be hard. Volare's Josh Moore is here to show us the steps to making tiramisu.



Serves 8

2 lbs Mascarpone Cheese

1 ¼ cup Pasteurized Egg Yolks

½ lb Sugar

3 oz Frangelico

1 500 gram package Ladyfingers

3 cups Espresso

½ cup Sugar

½ cup Kahlua

¼ cup Frangelico

Cocoa Powder for dusting


1. In a mixer combine egg yolks, sugar and Frangelico then whip on high until full volume (approximately 5 minutes). 

2. Add the mascarpone cheese to the egg mixture and whip just until fully incorporated.  Combine the espresso, sugar, Kahlua and Frangelico. 

3. Dip the ladyfingers into the espresso mixture quickly and layer in the bottom of a ½ hotel pan. 

4. Divide the mascarpone cream into equal 1/3rds and evenly spread the first 1/3 over the ladyfingers.  Repeat this procedure until you have 3 layers of ladyfingers and 3 layers of cream. 

5. Refrigerate for 2 days to allow the ladyfingers to absorb moisture from the cream.  After the 2 days dust the top with cocoa powder, cut portions, and enjoy!

Josh Moore, Executive Chef and Partner at Volare restaurant knew that he wanted to be a chef as soon as he could reach his grandmother's stove. Seven years later, at the age of fourteen, Josh was working in a professional kitchen. He started his professional career as the pastry assistant at Vincenzo's Italian restaurant in downtown Louisville, KY.

He has been Executive Chef and Executive Pastry Chef (a rare combo) at Volare since 2006. Through hard work and dedication, he became a partner in 2008.

Chef Josh's passion for food starts with the food itself. He has a 10-acre working farm where he harvests vegetables summer through fall and uses them at Volare.

As the Lead Chef of the March of Dimes annual Signature Chef event since 2008, Josh has helped raise hundreds of thousands of dollars. He has also cooked at the James Beard House in New York and is a regular on the show Secrets of Louisville Chefs.
