LOUISVILLE, Ky. (WDRB) -- Pancakes, eggs and margaritas -- it doesn't sound like they go together. But it's all related to two new businesses in downtown Louisville.
New shops and new restaurants continue to open just east of downtown, including, soon, a Wild Eggs restaurant.
Construction continues for the newest location for Wild Eggs in the Mercantile Gallery Lofts near Floyd and Main streets. Right now there are three Wild Eggs locations in the Louisville area that serve breakfast and lunch.
Business is very good, so the owners believe it's the right time to come downtown. JD Rothberg, the President and CEO, says, "We work hard, we try to, the things the way they need to be done. There is a lot of luck involved, people like us, we try and take care of our guests and we've been very successful with it."
So successful, that not far away on East Market Street the same owners are in the process of opening another restaurant, but this one will have a different concept.
It will be called Wild Rita's. and will have a bar, live music, and Mexican food. As Tony Efstratiadis, the chef and owner explains, "It's going to be really good, really flavorable, really bold and it's really going to show through what a good authentic restaurant for Mexican food."
The owners have just returned from a trip to Mexico for ideas on how to bring a true Mexican flair to their new restaurant.
