Leftovers are great after the holidays. But there are only so many turkey sandwiches a family can eat! Home Cuisine's Mae Pike has the perfect solution with her Turkey Tortilla Soup.
Turkey Tortilla Soup
8-10 plum tomatoes
4 tablespoons canola oil, divided
1-2 chipotle peppers in adobo
2 tablespoons adobe sauce (from chipotle can)
4-6 cups turkey or chicken broth
1 large onion, chopped
2 cloves garlic, chopped
1 fresh jalapeño, seeded and chopped
2 cups cooked, shredded turkey
Corn tortillas (at least one per person)
1 tablespoon canola oil
Heat oven to 400 degrees.
Peel and wash tomatillos, and cut out cores of both tomatoes and tomatillos. Place vegetables on a rimmed baking sheet and drizzle with 1-2 tablespoons oil. Season with salt and pepper and roast for 20 minutes.
Transfer to a blender and puree, in batches if necessary. Add chipotle pepper and adobo sauce. The chipotles are pretty spicy, so start small. Add only half of one at a time until you reach the heat you like. Do not add too many at once, as you cannot go back. Season with salt and pepper to taste. You will have about 6 cups of puree.
