La Coop shares recipe for New Year's Day white bean and kale soup

Nothing beats January's winter chill or a hefty New Year's Eve hangover like a hot bowl of homemade soup. Chef Bobby Benjamin of La Coop will share his favorite recipe for a hearty, one-bowl meal to serve on New Year's Day. Home cooks can use his recipe for white bean and kale soup to start their New Year on a warm and comforting note.

Eating vegetables such as cabbage, collard greens, mustard greens, chard, or kale for New Year's is associated with the idea that the folded greens symbolize money and are thought to bring good fortune. It's widely believed that the more greens one eats the larger one's fortune next year. Legumes including beans, peas, and lentils are also symbolic of money. Their small, seedlike appearance resembles coins that swell when cooked so they are consumed with financial rewards in mind.

White Bean & Kale Soup


2 Qts White Beans

3 oz. Country Ham

1 yellow onion small diced

1 carrot small diced

1 1/2 Qts chicken stock

1 1/2 Qts vegetable stock

2 oz. Kale pulled

1 sprig rosemary

Salt & Pepper to taste


Large pot, medium heat, render country ham

Add onion, carrot, rosemary

Add white beans

Add chicken stock & vegetable stock, cook until beans are tender

Season to taste

Add kale before serving

La Coop: Bistro a Vins will celebrate the New Year early with a five-course plated dinner of fun and festive dishes. Diners can visit for a pre-party meal or enjoy a romantic evening and still get home by midnight. The cost is $75 per person, plus tax and gratuity. Several styles of wine from throughout France will be paired with each course for an additional $50 per person. Dinner seating is available at 6 and 8:30 p.m. Reservations are required.
