Seared salmon with tropical fruit salsa is perfect for lent

LOUISVILLE, Ky. (WDRB) -- Mae Pike shares a lent-friendly recipe that is a colorful feast for the eyes.

Finding healthy options for lent season isn't difficult. But Home Cuisine's Mae Pike says not everyone is comfortable cooking seafood. She's sharing an easy and colorful recipe for a seared salmon with a tropical fruit salsa.

Seared Salmon w Tropical Fruit Salsa


1/2 cup mango, cubed, cut into 1/4-inch dice 1/2 cup cubed pineapple, cubed, cut in 1/4-inch dice 1 Kiwi Fruit, Peeled and diced 1/2 cup diced, roasted red bell peppers, diced, roasted 1/4 cup red onions,finely chopped

1 teaspoon jalapeno pepper, minced 1 teaspoon garlic, minced 1/2 cup Fresh Lime Juice 3 tablespoons fresh cilantro, chopped 1/4 teaspoon salt


Six 6-ounce center-cut salmon fillets with skin

2 tablespoons pure olive oil

Salt and freshly ground pepper

Set 2 large, heavy skillets over moderate heat for 3 to 4 minutes. Put the salmon fillets on a platter and coat with the olive oil. Season with salt and pepper. Add 3 fillets to each skillet, flesh side down. Cook over high heat until deeply browned, about 3 minutes. Turn the fillets and cook until the skin is deeply browned and crisp, about 5 minutes longer.
