LOUISVILLE, Ky. (WDRB) -- Chef Damaris Phillips is ready for a second season of her Food Network show, "Southern at Heart." Season two celebrates the relationship between food and love on her series, and it features more regional road segments to spotlight her love of food in Louisville and Kentucky. The new round of shows debuts on Sunday, March 16, 2014 at 10:30 a.m. eastern.

In Southern at Heart, Damaris plays both matchmaker and chef, teaching the kitchen clueless how to impress their dinner dates with her fresh take on Southern cuisine.

Damaris is a Louisville native who graduated from Jefferson Community and Technical College with a degree in culinary arts and now teaches at the same school inspiring up-and-coming chefs to follow their dreams. Before returning to teach, Damaris took on various restaurant and baking jobs, working in the front and back of house.

One of five kids, Damaris learned to cook at an early age and was responsible for cooking one night a week for her large family.

This past year, Damaris fulfilled a dream to compete on the popular Food Network show Food Network Star. Not only did she impress the judges, but also won over the audience vote and became the season nine winner.

Fried Chicken Salad Sandwiches

4 cups cold fried chicken, large dice (from 5 to 6 pieces breasts and thighs)

2 stalks celery, diced

3 green onions, sliced

3/4 cup mayonnaise

1/2 cup buttermilk

1/4 cup whole-grain mustard

1/4 cup chopped fresh parsley

1 1/2 teaspoons dried Italian seasoning

1 1/2 teaspoons fresh lemon juice

1/2 teaspoon cayenne pepper

Kosher salt and freshly ground black pepper

4 large croissants, split in half

Combine the chicken, celery and green onions in a large bowl. In another bowl, make the dressing by whisking together the mayonnaise, buttermilk, mustard, parsley, Italian seasoning, lemon juice and cayenne. Season with salt and black pepper. Pour the dressing over the chicken mixture and toss to coat. Refrigerate until cold, about 1 hour. Divide the chicken salad evenly among the croissants.

Cook's Note: If the skin on the cut-up fried chicken stays attached to the meat, use it in the salad. If it falls off the meat, feel free to throw it away

Yield: 4 servings
