LOUISVILLE, Ky. (WDRB) -- It's time to leave the comfort food of winter behind. Home Cuisine's Mae Pike is here to show us how to make a figure-friendly spring recipe for shrimp and pasta.
Shrimp and pasta
1/2 lb thin Whole Wheat spaghetti
20 -24 de-veined jumbo shrimp
3 garlic cloves, minced
1 (8 ounce) bag spinach
1 large onion, minced
1/4 cup extra virgin olive oil
1/4 cup fresh Basil
Juice from 1 lemon
1/2 cup roasted red peppers
1 cup blanched Asparagus, cup into one inch segments
Sautee Onion, and Shrimp 3 minutes, add garlic and spinach sautee until garlic is wilted. Add Peppers, lemon juice, cooked Asparagus and S+P, Serve over pasta, top with fresh Basil
