Easy recipes to turn your Derby party into a BBQ

 LOUISVILLE, Ky. (WDRB) -- Creating a the perfect menu for your Derby party can be challenging. But a barbecue may be just the ticket for your gathering. Chef Bill Lynch of The Bristol shows some quick and easy Derby-inspired BBQ dishes perfect for your Derby party using Trifecta Sauces and marinades. From appetizers to large plates for a crowd like Bourbon Beef and Pimento Cheese Flat Bread and creamy Blazing Barbecue Shrimp Dip, Chef Bill highlights the unique flavors of each dish in unconventional ways. The tomato-based barbecue sauces and bourbon-based marinade are all gluten-free and made of natural ingredients, meaning no preservatives, artificial colors or high-fructose corn syrup. Trifecta Blazing Barbeque Shrimp Dip

Start to finish: 10-15 minutes

Servings: 4

8 ounces cream cheese, cut into chunks

8 ounces hot pepper cheese, shredded

1 cup Trifecta Blazing Barbeque Sauce, or other Trifecta sauce of your choice

8 ounces cooked baby shrimp

1 bread boule, top cut off and hollowed out

In a large microwave-safe bowl, mix the cream cheese, hot pepper cheese and Trifecta sauce. Loosely cover and cook on high in microwave for 2 minutes. Carefully remove cover and stir mixture with a rubber spatula. Continue heating for 90-second intervals, stirring to evenly incorporate, until no chunks are present. Stir in the baby shrimp before carefully pouring mixture into the bread boule. Serve with chips, bread or vegetables.

Trifecta Bourbon Steak Slider

Start to finish: 1-24 hours (20 minutes active)

Servings: 4

12-16 ounces steak, such as flat-iron, flank or strip steak

4 ounces of Trifecta Bourbon Marinade

8 ounces of pimento cheese

4 ounces of arugula

4 ounces of french-fried onions

4 ounces of Trifecta Sweet Heat Barbeque sauce

12 "slider" buns or other rolls of choice

Place steak in a large zip-top bag along with Trifecta Bourbon Marinade. Work out air and seal bag, then refrigerate for 1-24 hours to marinate.

Preheat grill or grill pan to medium-high heat and remove steak from marinade. Place steak on a lightly-oiled grill and cook for 2 minutes, then turn 45 degrees and cook for another 2 minutes. Flip steak over and continue to grill until desired level of cooking is reached. Place steak on a clean cutting board to rest.

While your steak is resting, top the bottom half of each slider bun with a teaspoon of pimento cheese, followed by a pinch of arugula.

Slice the steak across the grain in thin slices for tenderness. Portion approximately one ounce of steak on each slider, followed by the Trifecta Sweet Heat Barbeque sauce and french-fried onions. Place top buns and serve.
