Home Cuisine shares the perfect breakfast in bed recipe to cook for mom this Sunday

LOUISVILLE, Ky. (WDRB) -- Serving mom breakfast in bed is a great way to show her you care. Home Cuisine's Mae Pike has a perfect brunch for Mother's Day. She shows just how easy it is to pull together a mini-smoked salmon quiche.

Mini smoked Salmon Quiche

4 ounce smoked Salmon

2 tablespoon minced yellow onion

2 tablespoon diced Roasted Red Peppers

1/4 cup(s) shredded Mozzarella

1 teaspoon(s) freshly ground pepper

5 eggs

3 egg whites

1 cup(s) 1% milk

1 Tablespoon chopped Fresh Dill

Position rack in center of oven; preheat to 325

°F. Coat a nonstick muffin tin generously with cooking spray

Whisk eggs, egg whites, and milk in a medium bowl. Divide the egg mixture evenly among the prepared muffin cups. Sprinkle Salmon, cheese. Peppers and dill onion in each cup

Bake until the tops are just beginning to brown, 25 minutes. Let cool on a wire rack for 5 minutes. Place a rack on top of the pan, flip it over and turn the quiches out onto the rack. Turn upright and let cool completely.
