Kick up dinner with a recipe for Tinga de Pollo

LOUISVILLE, Ky. (WDRB) -- Adding a little spice can kick up dinner time.  Kroger Chef Paul Dowell serves up a taste of Mexico with a recipe for Tinga de Pollo!  It's a quick and easy chicken tostada.

Kroger is celebrating ethnic cuisine starting in June, so customers will see great new products and get free recipes at their local store.

Tinga de Pollo
Makes 6 servings.

2 La Costena Chipotle Peppers in Adobo Sauce (Minced)

*NOTE: For an extra kick, add a 3rd Chipotle Pepper

1-10.75 oz. can Campbell's Tomato Soup
1Kroger Deli Savory Roasted Chicken (meat pulled & shredded)
1 tsp.Canola Oil
1 cup Kroger Frozen Onions
1  bag Ole Tostadas
1 (10 oz.) package Cacique Queso Fresco (crumbled)
1 (15 oz.) container Ole Crema Mexicana
1 bunch Cilantro (picked)

Place chipotle peppers & tomato soup in a small bowl.  Whisk until all ingredients are combined.

Preheat canola oil in a sauté pan over medium-low heat. 

Place onions in skillet.  Once onions are translucent, add in shredded rotisserie chicken.

Add blended Chipotle Pepper mixture to pan; stir to combine all ingredients.

Allow to simmer for 10 minutes.

Place a spoonful of chicken on top of each tostada, drizzle crema Mexicana over tostada, lightly garnish with queso fresco and cilantro and serve.

This dish is a quick and easy way to discover a little taste of Mexico and it is great for those mid-week meals when you are in a hurry!
