Apron, Inc. plans annual Disco Ball to help food service workers

LOUISVILLE Ky. (WDRB) -- Grab your leisure suits and platform shoes and get ready to relive the 1970's!  Apron, Inc. is holding their third annual Disco Ball at The Olmsted on Wednesday, June 3rd.  Apron, Inc's Dawn Bianconcini and The Brewery's owner and executive chef Shawn Ward explain the goal of the event.

Patrons will experience food, drinks and samples from nearly three-dozen local independent restaurants and vendors.  A silent auction is also planned along with 70's music and dancing. Disco attire is encouraged! All proceeds go to Apron, Inc.

Apron, Inc. supports local food service workers who've fallen on hard times through injury or illness.

Seared scallops with a parsnip purée and citrus buerre blanc

(from Shawn Ward, Executive Chef and proprietor of The Brewery)

1 grapefruit segmented and juiced
1 lemon segmented and juiced
1 lime segmented and juiced
1 orange segmented and juiced
1 tablespoon of honey
1/4 pound butter
Place juice and honey in a small saucepan and reduce to a glaze and slowly incorporate butter.

Salt and pepper
1 tablespoon clarified butter
Citrus segments reserved from above
Soy beans
Parsnip purée

Sear scallops in butter for about two minutes per side, place on purée and garnish with segments, beans and drizzle sauce over scallops.

Two parsnips
White truffle oil

Place parsnips in a small pot of water and cook until tender. Put parsnips in a food processor and blend till smooth add milk butter and small dash of white truffle oil.

About Apron, Inc.: The mission of APRON, Inc. is to provide temporary, limited financial relief to professional food and beverage workers in the Louisville, KY metro area who work at locally owned establishments and are experiencing financial distress due to illness, injury or other issues. The funds raised at the annual events go directly to locals in need of this support. Serving as a safety net, APRON serves the local community "helping you out of the weeds."

With the vibrant and thriving independent restaurant landscape in Louisville, APRON, INC. grew out of a need to support the workers at such establishments who by no fault of their own have fallen on hard financial times mostly relating to unexpected medical costs.
