New Orleans-themed restaurant to replace Le Gallo Rosso

LOUISVILLE, Ky. (WDRB) -- Le Gallo Rosso, an Italian restaurant in the Highlands, will close at the end of the month, and a New Orleans-themed eatery called Roux is planned for the space at 1325 Bardstown Road.

Le Gallo Rosso owner Annette Saco said in an interview Thursday that she was blindsided by a notice she received from her landlord to vacate by the end of July.

“Now I am trying to liquidate my life in 30 days,” she said, adding that the restaurant will close on July 26.

Saco said she had been looking to sell Le Gallo Rosso, which has been in business eight years, as she is nearing 60 and wanted to slow down.

Her lease was in a month-to-month status while she looked to sell the business, she said.

Geraldine and James Harrah, the building’s owners, did not immediately return a phone call Thursday.

The Staggers Group LLC ran a legal ad June 27 for a liquor license at the building for a restaurant called “Roux.”

Dustin Staggers said in an interview that he and his brother Kyle plan to serve “classic New Orleans dishes” like barbeque shrimp as well as beignets, chickory coffee and Abita beer. They have signed a 5-year lease for the space with annual renewal options for another five years, he said.

“We are trying to recreate New Orleans in that building,” said Dustin Staggers, who said he currently is chef at the Monkey Wrench and will remain in that role. 

Staggers said they hope to open by mid-September, but planned renovations to the building make the timeline hard to predict.
