Gluten-free vegetarian lasagna is a perfect summer dinner
LOUISVILLE, Ky. (WDRB) -- Summer's bounty from the vegetable garden leaves many wondering what to do with all those tomatoes and squash. Home Cuisine's Mae Pike has a vegetarian, gluten-free lasagna that is perfect for the lighter fare during the warm, sunny days.
8 medium zucchini
8 medium yellow squash
2.5 cups cottage cheese
1.5 lbs shredded mozzarella cheese
Salt and pepper to taste
Slice zucchini & squash lengthwise in ¼ inch slices. Spray sheet pans with cooking spray lay squash out and brush with olive oil and dust with salt and pepper, bake in 350 degree oven for 8 minute or until tender. Remove from oven and cool.
Chop 12 tomatoes & 1 onion, saute onion with basil or italian seasoning, add tomatoes and simmer 20 - 30 minutes. Strain and reduce liquid until thick, add back to tomatoes.
Mix the eggs & cottage cheese with a bit of salt and pepper. Spray a 9 x 12 pan with cooking spray. Put a thin layer of tomato sauce in the bottom of pan, sprinkle with mozzarella, put 1 layer of zucchini, then 1 layer of the cottage cheese, 1 layer tomato sauce, 1 layer of yellow squash. Finish with layer of tomato sauce and top with a generous layer of shredded mozzarella. Cover with foil and bake for 45 minutes in a 350 degree oven.
