Lucille Benner's Chocolate Earthquake Cake

 Lucille Benner's Chocolate Earthquake Cake

1 box Devils Food Cake Mix
1-3.5oz Can of sweetened flaked coconut
1 cup of chopped nuts (I use pecans)
1/4 cup of margarine
8oz cream cheese softened
1-16oz box of powdered sugar
Chocolate icing (if desired)
Whipped topping (if desired)

Directions:
1. Pre heat oven to 350 degrees
2. Prepare cake batter according to box
3. Grease 9x12 inch pan on bottom and sides
4. Cover the bottom of pan with nuts and coconut
5. Pour cake batter over nuts and coconut
6. Melt margarine and stir in cream cheese and powdered sugar together in a bowl until smooth.
7. Spoon mixture over unbaked batter
8. Bake for 40-42 minutes

You cannot test with a toothpick because this cake is supposed to be gooey. The powdered sugar mixture falls to the bottom and creates cracks when baking to create a cracked earth look hence the name Earthquake Cake. Sometimes I put a teaspoon of chocolate icing around the edge when done to make it look like dirt and rocks. You can also add whipped topping if you desire.
