Owners of Blue Dog Bakery launching butcher shop on Frankfort avenue

LOUISVILLE, Ky. (WDRB) -- From urban bakery to rural pig farm, a Louisville couple is using their success in the kitchen to propel a new business venture.

A vacant gas station on Frankfort Avenue doesn't look like much, but it's where the owners of Blue Dog Bakery are making their farm to table dreams come true.

Artisan bread has made made Bob Hancock and Kit Garrett foodie famous, but it's ham and salami that's taking the couple out of the bakery and out into pasture.

"It's actually the most relaxing thing we do," Garrett said.

On an old horse farm in Oldham County, the Hancocks are raising around 100 pigs.

"It's kind of like a customer," Garrett added. "Once they've been satisfied, they are pleased with what you've done and they thank you for it."

With plans for a butcher shop, the owners of Blue Dog are turning their focus to red hogs.

"They get what the guy down the road says is that high dollar food," Hancock explained.

Twice a day, seven days a week, the Hancocks feed the hogs the best food and give them the highest quality care.

"I still don't consider myself a farmer," Hancock said. "It's just an expensive hobby for me."

They don't make a single dime from their pigs, but Hancock says the quality, flavor and humanity is worth it.

"It's just the right thing to try and figure out how to utilize every piece and part because they are giving up their life for us," said Hancock.

They hope to have the butcher shop open by the fall of 2015.
