Unique Eats: Rick's White Light Diner

FRANKFORT, Ky. (WDRB) --It may be hours and hours away from the French Quarter and Bourbon Street., but Cajun cuisine is well represented in Kentucky's Capital at Rick's White Light Diner.

"You're not going to get what we have here probably anywhere other than New Orleans," said Rick's daughter, Hannah Davis.

This tiny eatery with license plates on the wall, pigs in the window, and pictures on the ceiling specializes in soft shell crab, shrimp, cat fish, crawfish pie, and gator.

"Where else are you going to get alligator?" Davis asked.

The most popular thing on the menu though are the Po Boys. 
The french bread is made in house and slightly undercooked. Then it's browned on the grill
while oysters are breaded and prepared for the frier.

 Owner, Rick Paul has been featured on the Food Network and in magazine after magazine.

"I've been cooking Cajun for a long time," he explained.

 He's quite the character too.

"He will give you a hard time from the time you walk in the door until the time you leave," Davis said with a smile.

Whatever he's doing is working. 
The restaurant brings in eating enthusiasts from all over the country. And, it's left a lasting legacy for his family to uphold.

"I'll probably be here after he's not,"

A taste of the Bayou in the middle of the Bluegrass.

"It's simple, but it's unique," Paul said.

Rick's White Light Diner is located at 114 Bridge St in Frankfort.
