LOUISVILLE, Ky. (WDRB) -- The morning routine can get hectic for kids heading back to school but don't forget to eat something.
In this School Smarts report, Keith Kaiser joins Chef Paul Dowell in creating fast easy breakfasts kids can do themselves.
Waffle Berry Parfait
1 Private Selection Belgian Waffle (toasted and tore in pieces)
4 tbl. Simple Truth Vanilla Greek Nonfat Yogurt
4 large strawberries (sliced)
¼ c. blueberries
Lay out two clear glasses or cups to build the parfaits in. Put ½ of the torn waffle in the bottom of each. Layer 2 tablespoons of the yogurt over top of the waffles. Sprinkle berries over top of the yogurt. Repeat with one more layer of everything, and serve. This is great to do with a bunch of different types of fruit. Let your child pick all their favorites and they are sure to start off with a good breakfast!
Strawberry Pastry Pies
1 Kroger prepared pie dough
4 tbl. Kroger strawberry preserves
1 egg (scrambled)
½ c. powdered sugar
1 tbl. water
1 drop red food coloring
½ tsp. colored sprinkles
Preheat oven to 425°F. Lay out pie dough on a cutting board and cut into four equal pieces. Put 1 tablespoon of strawberry preserves to one side of each slice and spread it out slightly, leaving about a 1" border around that opening. Brush all the edges of each slice with the mixed egg and fold each slice over to meet the edges. Crimp all the edges with the end on a fork and lay on a baking sheet with parchment paper. Brush the top of each pastry with the mixed egg and bake for 10 minutes at 425°F. Remove from oven and cool. Whisk the powdered sugar, water and food coloring together until well-blended. Spread the frosting on each pastry and sprinkle with colored sprinkles. Great for breakfast on the go! These can also be made a day or two in advance.
Peanut Butter Apple Fold-Its
1 Kroger Deli traditional white fold-it
2 tbl. Kroger natural creamy peanut butter
1 tbl. Bear Naked Blue Beary granola
4 slices Kroger Produce pre-sliced mixed apples
Lay out fold-it and spread peanut butter on one side. Sprinkle granola over top of the peanut butter. Lay out slices of apples and fold in half for a super-easy breakfast that travels great, and is great for you.
Eggs in a Nest
3 c. Simply Potatoes shredded hash browns
½ c. + ¼ c. Kroger shredded mild cheddar cheese
¼ tsp. salt
1/8 tsp. ground black pepper
½ tbl. canola oil
½ c. fully cooked turkey sausage crumbles
Preheat oven to 425°F and spray a 6-count muffin tin with pan release. In a large bowl, mix together hash browns, ½ cup cheddar cheese, salt, pepper, and oil. Divide mixture between the 6-spots on the muffin tin and press into the sides to form a nest. Bake potatoes for 15 minutes (should be browned). Remove from oven and lower temperature to 350°F. Crack eggs one at a time into a small cup and pour them into each nest (or scramble the eggs). Sprinkle sausage and remaining cheese over the eggs and bake for another 15 minutes (until eggs are fully cooked and cheese is browned). Serve piping hot out of the oven for a perfect breakfast in a nest.
