Louisville restaurant swarming in success with homemade honey

LOUISVILLE, Ky. (WDRB) -- Everyone is abuzz about what's happening on top of a Highlands restaurant.

Thousands of bees are swarming at the Bristol Bar and Grille.

But no one's in danger.

The restaurant placed a beehive on its roof back in the spring.

Now, six months later, there's honey.

It takes a special suit and skills to reach into the hive to collect it.

Local beekeepers from Geez Beez are maintaining it, and the Bristol has big plans for how to use all the honey.

Executive Chef Austin Wilson said, "We're doing craft cocktails, food on the brunch menu, cakes, braise meat in it, smoke it, anything you can think of -- we have the time and we have the honey."

The Bristol plans to use the honey in a featured dish every day in January.
