A new restaurant taking over former Tumbleweed spot is ready to create its own identity

LOUISVILLE, Ky. (WDRB) -- Doc's Cantina has transformed the old Tumbleweed building into an electric Mexican restaurant with south-of-the-border cuisine.

The restaurant features bright, bold colors on the outside -- but the inside is just as vibrant, making drivers do a double-take.

"We were trying to go for the Mexican kind of graffiti look, so you'll see that as you walk through the restaurant," said general manager Jeremy Rhodes.

The team behind Doc Crow’s wanted to bring Latin America to Louisville with its signature 'Mex-Mex' dishes.

"Mex-Mex is just traditional Mexican Street Food," Rhodes explained.

Homemade salsas, guacamole, carnita sandwiches, beef Baracoa tacos and the fried enchiladas are just a few items said to be a big hit.

"We never thought we'd be doing frozen cocktails, but we tried them and they're delicious," said Rhodes. "We've got so many different margaritas that are so amazing."

The restaurant sits at the foot of the Big Four Bridge with a breathtaking view of the Ohio River. But despite construction and the new makeover, many people can't help but think of Tumbleweed when they pass by.

"I'm not going to lie and say it's been easy because people know this as the Tumbleweed, but we're taking it more as a challenge for us to make it our own restaurant," Rhodes said. "Just seeing the amount of people who are down here at Waterfront Park on a daily basis on the weekends gets us really excited that this is going to be a consistently busy restaurant."

Opening just before Derby, it’s sure to be a challenge, but the Doc's Cantina team believes they're ready to give Louisville a taste of Latin flavor.

Doc's Cantina opens to the public Tuesday, April 5.
