HopCat sets opening date for new Highlands location
A new restaurant and bar offering 132 different craft beer selections and 200 whiskeys opens in the Highlands next month.
LOUISVILLE, Ky. (WDRB) -- It's not ready for business yet, but construction is moving along at HopCat, and in five weeks the space will be ready for customers.
The new restaurant and bar has been under construction since last year on Bardstown Road at the former Spindletop Draperies property.
The small chain based out of Michigan is known for its craft beers, and the Louisville location will brew two of its own.
"We really make a huge focus on craft beer," said Eric Averill, HopCat's general manager. "We're going to have 132 drafts featuring at least 30 Kentucky beers at all times. We're also going to feature about 200 whiskeys with a huge focus on Kentucky bourbon."
"We want to keep a nice variety so people can come in. If they want something light, crisp, refreshing, they can have that or something nice, heavy, malty like a stout, they can have that as well," said Chase Myers, HopCat's beer program manager.
To house 132 different types of beer, HopCat needs a special room just for the kegs.
"It's going to hold at least 300 kegs, stacked on stacks," Myers said. "It's going to be a jigsaw puzzle to try to get all those hooked up. It's a very intricate system."
But once all 300 kegs are set up and ready to go, the room will be completely filled.
"It's going to be a heavy room there," Myers said.
With the opening approaching, HopCat is looking to hire 200 workers. Dishwashers, cooks, bartenders, servers and security guards are needed.
"The entire management team is out front, just trying to welcome everybody that's walking by, get some new hires and also talk to the locals and get them excited about the building," Averill said.
For a city that embraces good food and good drinks, HopCat hopes that excitement isn't hard to find.
"The craft scene is really blowing up in this area, and we're super excited to be part of it," Averill said.
"There's more breweries opening up every month. I think that Louisville is becoming a craft beer mecca, so I think we'll do really well around here," Myers said.
In five weeks, construction will wrap up and the space will be transformed into a new Highlands hangout.
HopCat will open on July 30.
