LOUISVILLE, Ky. (WDRB) – As the temperatures heat up, you may be looking for the perfect cooling side dish for your summer barbecues.

Kroger Chef Paul Dowell joins WDRB in the Morning to show us how to make a Summer Fresh Watermelon & Feta Salad.

Summer Fresh Watermelon & Feta Salad

1 sm. (12 cups) Whole Seedless Watermelon (washed, chilled, peeled & cubed)

1 ½ c. Murray’s Feta Cheese (crumbled or small diced)

1-.66 oz. pkg. Simple Truth Fresh Mint (picked, rough chopped)

5 oz. pkg. Simple Truth Arugula

1 Lime (juiced)

1 Naval Orange (juiced)

1 Tbl. Bee Raw FL Orange Blossom Honey

½ tsp. Kosher Salt

¼ tsp. Fresh Cracked Black Pepper

¼ c. Murray’s Extra Virgin Olive Oil

  • Combine watermelon, feta, mint & arugula in a large bowl.
  • Combine juice, honey, salt, pepper & olive oil in a mason jar & give a good shake to blend well.
  • Drizzle dressing over salad right before serving & toss gently. Serve!
