LOUISVILLE, Ky. (WDRB) -- Thanksgiving is full of turkey, mashed potatoes, and stuffing, but don't leave out the vegetables.

Kroger Chef Paul Dowell joined WDRB in the Morning to share a couple fall vegetable recipes.

Brussels Sprouts with Onion Jam

Serves 6-8

  • 6 c. Brussels Sprouts (trimmed & halved)
  • 1 ½ Tbl. Extra Virgin Olive Oil
  • ¾ tsp. Kosher Salt 
  • ¼ tsp. Fresh Cracked Black Pepper
  • 1 lrg. Sweet Yellow Onion (sliced)
  • 3 sprigs Fresh Thyme (picked)
  • ½ c. Apple Cider Vinegar
  • 1 Tbl. Light Brown Sugar 

Directions:

  1. Preheat oven to 400 degrees
  2. In a medium bowl, combine brussels sprouts, 1 Tbl. olive oil, ½ tsp. & black pepper.  Toss & spread out evenly on a foil lined baking pan.  Roast until tender, 20-30 minutes.
  3. While sprouts are roasting, heat ½ Tbl. olive oil over medium heat.  Add onions & sauté until caramelized, 8-10 minutes.
  4. Add thyme, vinegar, brown sugar & remaining ¼ tsp. salt.  Stir occasionally until liquid is reduced & mixture is thickened.
  5. Pour sprouts on serving dish & pour onion jam over top.  
  6. Enjoy this great recipe at your Thanksgiving dinner or any day of the week.

Roasted Fall Vegetables

Serves 6-8

  • 6 c. Large Cut Mixed Fall Vegetables  (carrot, parsnip, butternut squash, sweet potato, red potato, onion)
  • 1 sprig Rosemary (picked & chopped)
  • 1 Tbl. Extra Virgin Olive Oil
  • ¾ tsp. Kosher Salt 
  • ¼ tsp. Fresh Cracked Black Pepper
  • ¼ c. Dried Cranberries
  • ¼ c. Chopped Walnuts
  • 1 Tbl. Light Brown Sugar (packed)
  • 1 Naval Orange (juiced) 

Directions:

  1. Preheat oven to 400 degrees.
  2. In a medium bowl, combine vegetables, rosemary, 1 Tbl. olive oil, ½ tsp. & black pepper.  Toss & spread out evenly on a foil lined baking pan.  Roast until tender & lightly caramelized, 20-30 minutes.
  3. While vegetables are roasting, add cranberries, walnuts, brown sugar & orange juice to a small pot over medium-high heat. Bring to simmer & reduce until slightly glazed, 3-5 minutes. 
  4. Pour roasted vegetables on serving dish & pour garnish over top.  
  5. Enjoy this great recipe at your Thanksgiving dinner or any day of the week.
