Food expert & cookbook author Sarah Fritschner shares a recipe for a quick & easy spice rub that adds flavor without adding fat, and it uses coffee.

Heine Brothers' Coffee and Spice Rub

2 tablespoons coffee grounds

2 tablespoons ground black pepper

1 tablespoon ground cumin

2 teaspoons salt

1 teaspoon sugar

1/2 teaspoon cayenne pepper (or to taste)

Combine all ingredients and stir to blend. Store in a jar with a tight-fitting lid or in a zipper-style plastic bag. Keep in a dark cupboard away from the stove or other heat for 3 weeks, or for several months in the freezer.

To make coffee-spice rub chicken:

Use 2 teaspoons of rub per pound of chicken. Sprinkle the chicken all over to season it. Cover and refrigerate several hours, or let stand at room temperature while oven or grill preheats to 400 degrees.

Place the dark meat and wings on the grill rack or, if cooking in the oven, on a rack over a baking pan. Cook them 10 minutes. Cut the breast pieces in half to create 2 shorter pieces and place them on the rack. Continue to cook chicken for 20 minutes, or until cooked through.
