Dine & Dash Tomato and Mozzarella Sandwiches

Tomato and Mozzarella Sandwiches with Pesto Mayonnaise

Makes 4 servings

¼ c light mayonnaise

2 t prepared Pesto

¼ t fresh ground black pepper

8 slices Meijer Organic whole wheat bread

8 oz part skim mozzarella cheese, sliced

4 roma tomato, sliced

1. In a small bowl, stir together mayonnaise, pesto, and pepper. Spread mayonnaise mixture on each piece of bread. Evenly divide cheese and tomato slices between two slices of the bread. Top with remaining bread slice

2. To grill if desired, spray a large skillet with nonstick spray and place over medium heat. Cook 5 to 7 minutes or until bread is golden brown. Flip sandwich and cook 2 minutes more or until cheese is melted.
